APPEARANCE: Red / purple with a dark centre.

BOUQUET: Complex aromas of blackberry, plum, kirsch, vanilla and lavender combine with hints of spicey sandalwood oak.

PALATE: Full bodied, with rich and intense black fruit flavours, meld into the chalky tannins. The complex structure of this wine suggests it will age for many years.

FOOD MATCH: Lamb and other red meats or hearty mushroom dishes.

VINTAGE CONDITIONS: The 2021 vintage was in a word ‘Brilliant’. Barossa saw cool and dry conditions which has produced excellent quality reds and whites. Great growing conditions combined with good yields created a memorable harvest, with all wines showing a wide array of aromas and flavours. Soft supple tannins are in abundance in the reds which has ensured easy drinking in their youth, with careful cellaring also reaping rewards. The highlight for 2021 was the overall quality, a genuine 10/10 season.

ALCOHOL: 14.5%

Carefully hand harvested at ultimate fruit sweetness from estate vineyards, the fruit is fermented separately on skins for 9 days with temperatures ranging from 19-28 deg celsius. The wine is then pressed to stainless steel tanks and allowed to go dry. Malolactic fermentation is completed in new and 1 year old French oak barriques for 20 months and topped monthly.

2021 Cabernet Sauvignon

Barossa Valley is cooler than is generally believed and
a great climate for Cabernet. The thing with Barossa
Cabernet is that when it’s ready for harvest our winery
is full of Shiraz. This is when the winemakers beg our
viticulturalist to harvest one fermenter’s worth right in
the sweet spot. Barossa Valley Cabernet is always going
to be richer and juicer than some of our cooler climate
cousins, but this helps aid its drinkability in its youth.
