This is a single vineyard wine from our vineyard by the name of “The Fave”. It will benefit from some time spent in bottle, cellar up to 10 years.
Eyes: Garnet / Rhubarb
Nose: Cherry, spicy and earthy notes. Aniseed characters
Mouth: Soft and generous medium bodied wine. With hints of cherry and herbal undertones of oregano
Body: Medium bodied

100% whole bunch 100% wild yeast. Harvested by hand on the 15th March 2018 and placed carefully into the open fermenters, so as not to release too much juice. The fermenters are then covered with the cooling on, to keep the fruit cold in order to slow down the fermentation and let the fruit relax over a few days. We start the process of pigeage by foot to release the juice and get the yeast working, just slightly at first and then as needed. After primary fermentation was completed, it was gently pressed and let settle for two days then racked to old barrels for MLF fermentation. The wine was bottled with no finings or filtration.
