Fruit was harvested by hand on the 15th February, then lightly pressed as whole bunches, no crushing as I didn’t want too much juice to skin contact. It’s pressed straight to tank and left to sit cold for two days. Then to barrels for fermentation in French oak barriques 30% new with 100% wild yeast. The barrels are then put into the cool room and fermented until the wine is dry. Over the months leading to bottling the wine is stirred weekly.
