Garganega is the 5th largest white grape variety grown in Italy and with its long loose bunches helps in the defence of disease. Harvesting was done on the 24th April making this one of the last batches for the vintage. Harvested early in the morning and once at the winery, put straight into the press.
Because (for me) Garganega is all about texture, we only let the juice settle overnight before warming and starting the fermentation. This lasted for 12 days but we kept the wines on lees for a few months, looking for that little extra, before getting ready for bottling.
