Grenache is an awesome grape and is the back bone of so many blended wines around the world. We have several Grenache vineyards that really perform on their own from time to time, but the Fave seems to excel more years than not. Normally it is a walk up start to Avignon, but sometimes we cut a little out for special treatment. The 2015 Fave is the result of 3 vintages done in Burgundy by winemaker Stephen Dew. The wine is made without preservatives (no S02 added) and has just the natural acid it was blessed with from the vineyard.
Harvest 28th March 2015. Fermented on skin for 16 days. 100% whole bunch, 100% wild yeast and pigeage. The wine was fermented at (24-32 Degrees centigrade) during this time it was given light pigeage as needed, after primary fermentation the wine is gently pressed to tank, where it completed its malolactic fermentation, The wine was bottled with no finings or filtration and no preservatives add.
Garnet / Rhubarb.
Cherry, spicy and earthy notes. Aniseed characters.
Soft and dry all the way through, high glycerol barely cuts through the savoury tannin. Raspberry and strawberry notes.
This is a single vineyard wine from the vineyard by the name “The Fave.” It will benefit from some time spent in bottle, cellar up to 10 years.
